People are usually shocked to discover Japanese Knotweed is actually edible - and it's not one of those things that you can just eat, it actually tastes great. I use knotweed as a wild rhubarb in loads of dishes, if rhubarb was growing so abundantly in the wild I think most people would be well chuffed. It is worth noting that you have to be a little careful when picking knotweed so please see our blog post on picking Japanese knotweed.
