People are usually shocked to discover Japanese Knotweed is actually edible – and it’s not one of those things that you can just eat, it actually tastes great. I use knotweed as a wild rhubarb in loads of dishes, if rhubarb was growing so abundantly in the wild I think most people would be well chuffed.
