The pesto I made with wild garlic is thick, chunky and delicious with a huge range of recipes, from stuffing chicken breast to serving as wild garlic bread and of course the classic pesto and pasta \u2013 it\u2019s truly versatile and can be bagged in zip seal bags and kept in the freezer for whenever you need it.<\/p>\n<p>This recipe is quick, easy and has that classic taste that only simple cooking and fresh ingredients give you.<\/p>\n<hr \/>\n<h2>Wild Garlic Pesto Recipe Video<\/h2>\n<p><iframe loading=\"lazy\" title=\"Wild Garlic Pesto \ud83c\udf43\ud83c\udf3f\u2728 - an Irresistible recipe from the Woods\" width=\"500\" height=\"281\" src=\"https:\/\/www.youtube.com\/embed\/i1fem0DAs9g?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe><\/p>\n<hr \/>\n<h2>Ingredients:<\/h2>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 One hand\/50g fresh Wild Garlic \u2013 stems and leaves<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 One hand\/50g Nettle tops<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 80g cob nuts \u2013 crushes (or sunflower seeds if you&#8217;re nut free)<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 80g hard cheese grated &#8211; parmesan (or a tablespoon yeast flakes)<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 100ml olive oil<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Basil to taste<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 10\u00a0 Sorrel leaves (or the juice of half a lemon)<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 400g penne pasta (you can also use Gluten-Free Pasta)<\/p>\n<hr \/>\n<h2>Method:<\/h2>\n<p>&#8211; Bring a pan of water to the boil, add a pinch of salt and the dried pasta, this will take about 8 minutes in which time you can make the pesto.<\/p>\n<ol>\n<li>Chop the nettles and wild garlic in to small pieces, use gloves so you don\u2019t get stung.<\/li>\n<li>If you have a food processor, chuck the nettle, wild garlic, cob nuts and sorrel leaves and basil in and blitz very quickly, 10 seconds at a time so it\u2019s well mixed but still crunchy.<\/li>\n<li>If not put the wild garlic, nettle tops, sorrel leaves and mixed nuts in a pestle and mortar and grind well, add basil as you like (I prefer it without)<\/li>\n<li>In a bowl mix the garlic, nettle and nut paste to the grated cheese and add oil until you reach a consistency your happy with, season to taste.<\/li>\n<li>Drain the pasta, place in a large bowl and toss the pesto through it, enjoy with garlic bread and an extra sprinkling of parmesan cheese.<\/li>\n<\/ol>\n<p>Or Store the pesto in the fridge for up to 2 weeks, alternatively bag and freeze using within 3 months.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-4454\" src=\"https:\/\/totallywilduk.co.uk\/wp-content\/uploads\/2021\/05\/Wild-Garlic-Pesto-Pasta-Close-up-e1570179560755-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/totallywilduk.co.uk\/wp-content\/uploads\/2021\/05\/Wild-Garlic-Pesto-Pasta-Close-up-e1570179560755-300x225.jpg 300w, https:\/\/totallywilduk.co.uk\/wp-content\/uploads\/2021\/05\/Wild-Garlic-Pesto-Pasta-Close-up-e1570179560755-900x675.jpg 900w, https:\/\/totallywilduk.co.uk\/wp-content\/uploads\/2021\/05\/Wild-Garlic-Pesto-Pasta-Close-up-e1570179560755-768x576.jpg 768w, https:\/\/totallywilduk.co.uk\/wp-content\/uploads\/2021\/05\/Wild-Garlic-Pesto-Pasta-Close-up-e1570179560755-150x113.jpg 150w, https:\/\/totallywilduk.co.uk\/wp-content\/uploads\/2021\/05\/Wild-Garlic-Pesto-Pasta-Close-up-e1570179560755.jpg 1000w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/p>\n<blockquote><p><a href=\"https:\/\/totallywilduk.co.uk\/2018\/11\/10\/wild-garlic-identification-allium-ursinum\/\">Click here to identify wild garlic<\/a><\/p><\/blockquote>\n","protected":false},"excerpt":{"rendered":"<p>Through this piece we&#8217;re going to look at how to create our favourite Wild Garlic Pesto!
