Waxcaps are familiar-shaped fungi that are often brightly-coloured with a waxy or slippery-looking cap we’re going to take a closer look at them in this introduction to waxcap mushrooms piece. The botanical name for this family is Hygrocybe meaning ‘watery head’. They are typically found in grasslands that are poor in nutrients, places such as old pasture, sand dunes, heathland, lawns and cemeteries. They do sometimes also appear in woodlands.

From an edibility point of view most are edible but due to their scarcity and their slimy nature there’s only really a few that I consider to be good for the kitchen such as the Meadow Waxcap (Hygrocybe Pratensis), and only then if i find them in abundance.

How to identify Waxcap Mushroom;
They tend to be quite easy to identify as a group, the key features to look for are:
- Smooth to slightly scaly caps that are convex to conical and waxy or sticky when damp.
- Many are brightly coloured in shades of red, orange, or yellow.
- Where present, the gills beneath the cap are equally coloured and usually distant, thick, and waxy.
- The stems of Hygrocybe species lack a ring.

You can Help protect their habitats
As I mentioned earlier, unfertilised grasslands are getting rarer and rarer which is bad not only for mushroom hunters but also the planet as a whole. Undisturbed grasslands store a third of the world’s land-based carbon in their soils. The charity Plantlife has an app that you can use to record Waxcap sightings. Sending in sightings of waxcaps can help experts identify forgotten patches of old grassland, which they can then target for protection.

Whether you’re a beginner or someone who wants to deepen their knowledge, our foraging walk in Sussex is the perfect way to learn all about wild food.
WHAT TO EXPECT
To begin, we will go through the basics of foraging, how Totally Wild got started and some of the best practices we’ve found along the way.
We will then head out on our walk to discover what exciting wild foods are growing nearby from flowers to fruits, fungi, seaweeds & tubers – there’s plenty to find. We run our courses throughout the year so you can experience the changing habitats and plants through the different seasons.
During the foraging event, your professional forager will introduce you to a vast number of edible species; giving you tips on harvesting, correct identification and possible look-alikes as well as a huge range of cooking ideas.
You will have an opportunity to taste a range of pre-made wild food tasters from syrups, flavoured salts and alcohol infusions.
FOLLOWING THE EVENT
You’ll be sent an email detailing everything you found on the day, along with some tips on harvesting and how to use wild food in everyday life.
WHAT TO BRING
Ultimately bring along anything you feel necessary for a day outdoors. We will be outside for the majority of the course during rain or shine. We do advise the following items:
Suitable clothing for the predicted weather (an umbrella if it’s predicted rain)
Sturdy footwear. Walking boots are highly recommended.
A drink – some wild flavours may be strong and water is always advised for a days foraging

Whether you’re a beginner or someone who wants to deepen their knowledge, our afternoon foraging walk in Sussex is the perfect way to learn all about wild food.
WHAT TO EXPECT
To begin, we will go through the basics of foraging, how Totally Wild got started and some of the best practices we’ve found along the way.
We will then head out on our walk to discover what exciting wild foods are growing nearby from flowers to fruits, fungi, seaweeds & tubers – there’s plenty to find. We run our courses throughout the year so you can experience the changing habitats and plants through the different seasons.
During the foraging event, your professional forager will introduce you to a vast number of edible species; giving you tips on harvesting, correct identification and possible look-alikes as well as a huge range of cooking ideas.
You will have an opportunity to taste a range of pre-made wild food tasters from syrups, flavoured salts and alcohol infusions.
FOLLOWING THE EVENT
You’ll be sent an email detailing everything you found on the day, along with some tips on harvesting and how to use wild food in everyday life.
WHAT TO BRING
Ultimately bring along anything you feel necessary for a day outdoors. We will be outside for the majority of the course during rain or shine. We do advise the following items:
Suitable clothing for the predicted weather (an umbrella if it’s predicted rain)
Sturdy footwear. Walking boots are highly recommended.
A drink – some wild flavours may be strong and water is always advised for a days foraging
Snacks should you feel the need for them during the foraging walk.
A pad or paper should you wish to take notes
EXTRA BITS
Finalised course details are sent out on the Monday before the event to the email address used during the booking process. This email will include the specific meeting location for the course and an introduction to your forager for the day. If you have not received this email by the end of the Monday before the event please contact us. On the odd occasion our emails can end up in junk folders so please check there first.
We can never guarantee what will be found on our courses. One of the joys of foraging is eating truly seasonal ingredients and never quite knowing what to expect! What we’ll see and eat will vary from season to season and venue to venue.
Our foraging events are run outdoors, and they take place in rain or shine. Please bring appropriate clothing and shoes for the predicted weather conditions.

There is a surprisingly wide variety of wild edibles at this site, as well as some interesting poisonous species! It is unsurprising, then, that this is an ecosystem formed on a basis of sandy, acidic soils, with sandy beaches and a sandstone cliff. Buxton Old Rd, Macclesfield SK11 0APThis site is situated on and around the hill of Tegg’s Nose- our walks often take us part way up the hill, and so although our walks are always undertaken at a slow pace do let us know if you have questions about the suitability of this venue for you. This is an exciting place to forage, being a high altitude habitat. Whether you’re a beginner or someone who wants to deepen their knowledge, our foraging walk in Devon is the perfect way to learn all about wild food.
WHAT TO EXPECT
To begin, we will go through the basics of foraging, how Totally Wild got started and some of the best practices we’ve found along the way.
We will then head out on our walk to discover what exciting wild foods are growing nearby from flowers to fruits, fungi, seaweeds & tubers – there’s plenty to find. We run our courses throughout the year so you can experience the changing habitats and plants through the different seasons.
During the foraging event, your professional forager will introduce you to a vast number of edible species; giving you tips on harvesting, correct identification and possible look-alikes as well as a huge range of cooking ideas.
You will have an opportunity to taste a range of pre-made wild food tasters from syrups, flavoured salts and alcohol infusions.
FOLLOWING THE EVENT
You’ll be sent an email detailing everything you found on the day, along with some tips on harvesting and how to use wild food in everyday life.
WHAT TO BRING
Ultimately bring along anything you feel necessary for a day outdoors. We will be outside for the majority of the course during rain or shine. We do advise the following items:
Suitable clothing for the predicted weather (an umbrella if it’s predicted rain)
Sturdy footwear. Walking boots are highly recommended.
A drink – some wild flavours may be strong and water is always advised for a days foraging
Snacks should you feel the need for them during the foraging walk.
A pad or paper should you wish to take notes
EXTRA BITS
Finalised course details are sent out on the Monday before the event to the email address used during the booking process. This email will include the specific meeting location for the course and an introduction to your forager for the day. If you have not received this email by the end of the Monday before the event please contact us. On the odd occasion our emails can end up in junk folders so please check there first.
We can never guarantee what will be found on our courses. One of the joys of foraging is eating truly seasonal ingredients and never quite knowing what to expect! What we’ll see and eat will vary from season to season and venue to venue.
Our foraging events are run outdoors, and they take place in rain or shine. Please bring appropriate clothing and shoes for the predicted weather conditions.
Children are welcome on our courses, and children under the age of 12 may attend for free, with one child attending per ticketed adult. Please make sure to add a note to your order where prompted at checkout to let us know if you are bringing a child. There are a limited number of venues which do not allow children under 12 to attend- please double check the venue information for your event to confirm.

Old Barn Farm, Cinderford Lane, Hellingly, Sussex, BN27 4HLWild Weald Wood is an 85 acre ancient woodland and medieval deer park. This is a lovely site with a great diversity of trees and fungi. Some hills and paths are clay and become very boggy after rain so make sure you wear suitable footwear and a walking stick if you feel it's necessary if the weather’s looking wet! Some paths are overgrown at this site, and sometimes our foraging takes us up and down some steep slopes. If you think this might be an issue for you, or if you have any questions, please get in touch. To begin, we will go through the basics of foraging, how Totally Wild got started and some of the best practices we’ve found along the way.
We will then head out on our walk to discover what exciting wild foods are growing nearby from flowers to fruits, fungi, seaweeds & tubers – there’s plenty to find. We run our courses throughout the year so you can experience the changing habitats and plants through the different seasons.
During the foraging event, your professional forager will introduce you to a vast number of edible species; giving you tips on harvesting, correct identification and possible look-alikes as well as a huge range of cooking ideas.
You will have an opportunity to taste a range of pre-made wild food tasters from syrups, flavoured salts and alcohol infusions.
FOLLOWING THE EVENT
You’ll be sent an email detailing everything you found on the day, along with some tips on harvesting and how to use wild food in everyday life.
WHAT TO BRING
Ultimately bring along anything you feel necessary for a day outdoors. We will be outside for the majority of the course during rain or shine. We do advise the following items:
Suitable clothing for the predicted weather (an umbrella if it’s predicted rain)
Sturdy footwear. Walking boots are highly recommended.

Finnygook Ln, Portwrinkle, Torpoint PL11 3BUPortwrinkle’s lovely shingle and sand beaches make for a perfect setting for some coastal foraging. We often find hedgerow plants on our walks here, as well as all sorts of seaweeds and coastal species such as sea beet and samphire. Remember to dress appropriately and consider bringing wellies or other shoes that can get wet due to the coastal nature of this course. There’s little to no shade at this venue in the summer, so if it looks like it will be a sunny day bring your hat along! Wild Weald Wood
Old Barn Farm, Cinderford Lane, Hellingly, Sussex, BN27 4HLWild Weald Wood is an 85 acre ancient woodland and medieval deer park. This is a lovely site with a great diversity of trees and fungi. Some hills and paths are clay and become very boggy after rain so make sure you wear suitable footwear and a walking stick if you feel it's necessary if the weather’s looking wet! Some paths are overgrown at this site, and sometimes our foraging takes us up and down some steep slopes. It is unsurprising, then, that this is an ecosystem formed on a basis of sandy, acidic soils, with sandy beaches and a sandstone cliff. Whether you’re a beginner or someone who wants to deepen their knowledge, our foraging walks in London are the perfect way to learn all about wild food.
WHAT TO EXPECT
To begin, we will go through the basics of foraging, how Totally Wild got started and some of the best practices we’ve found along the way.
We will then head out on our walk to discover what exciting wild foods are growing nearby from flowers to fruits, fungi, seaweeds & tubers – there’s plenty to find. We run our courses throughout the year so you can experience the changing habitats and plants through the different seasons.
During the foraging event, your professional forager will introduce you to a vast number of edible species; giving you tips on harvesting, correct identification and possible look-alikes as well as a huge range of cooking ideas.
You will have an opportunity to taste a range of pre-made wild food tasters from syrups, flavoured salts and alcohol infusions.
FOLLOWING THE EVENT
You’ll be sent an email detailing everything you found on the day, along with some tips on harvesting and how to use wild food in everyday life.
WHAT TO BRING
Ultimately bring along anything you feel necessary for a day outdoors. We will be outside for the majority of the course during rain or shine. We do advise the following items:
Suitable clothing for the predicted weather (an umbrella if it’s predicted rain)
Sturdy footwear. Walking boots are highly recommended.
A drink – some wild flavours may be strong and water is always advised for a days foraging
Snacks should you feel the need for them during the foraging walk.

WHAT TO BRING
- Suitable clothing for the predicted weather, such as long trousers to protect against nettles and brambles.
- Sturdy footwear, preferably closed-toed shoes for off-path exploration.
- A drink, as some wild flavours may be strong, and it’s advisable to have water for the day.
- Snacks for the foraging walk, as lunch will be served around 2/3pm.
- A pad or paper if you wish to take notes.
- A blanket or chair for the communal meal, as seating options may vary depending on the venue.
- Your own bowl & cutlery if you wish to use yours

- Course details, including the specific meeting location and an introduction to your forager, will be sent via email on the Monday before the event. Ensure you check your inbox (and junk folder) for these details.
- The foraging experience is dependent on seasonal availability, so what you see and eat may vary from season to season and location to location.
- Children are welcome, and children under 12 can attend for free with one ticketed adult. While we cannot cater specifically for children, you are welcome to share your portion with them. Be sure to check the venue information for any age restrictions.

Little Wittenham, Didcot OX14 4QZA Site of Special Scientific Interest, the Wittenham clumps are two copse-topped hills, with a further small woodland at their base. The site is owned and managed by the Earth Trust, who are promoting a habitat of primary broadleaf trees with some conifers throughout. As our route at this venue often takes us up the hills, please note that there are steep inclines on these walks. What to Expect on the Forage and Cookery Course in Cambridgeshire
The foraging experience will last approximately 5-6 hours, giving you ample time to learn about foraging, explore the area, and enjoy a wild food meal!
You will be guided by a professional forager who will teach you about the rules and ethics of foraging. You’ll receive tips on how to confidently identify different plants, including their edible, medicinal, and herbal uses.
The foraging experience will involve a slow-paced walk with frequent stops to discuss and identify various plants, fruits, fungi, seaweeds, and tubers. The species you encounter may vary depending on the location, whether it’s an inland or coastal walk, and the season, but they’ll always be epic.
During the day, you’ll have the opportunity to sample an assortment of pre-made wild food items, including syrups, flavored salts, and alcohol infusions. These wild treats will give you a sneak peek into the incredible flavors that nature has to offer.
Following the foraging expedition, you can opt to participate in a communal cooking session, creating dishes that are inspired by the season and that celebrate the bounty of nature.
