This is a delicious recipe that combines the earthy flavour of nettle with the creamy goodness of garlic butter beans. This recipe is simple yet bursting with flavour, making it a perfect dish for both novice and seasoned cooks.
Ingredients:
- 1 tin Butter beans (you can use any variety you prefer)
- 1 handful of foraged Nettle leaves, washed
- 1 tablespoon of butter
- 1 tablespoon cooking oil
- 3 cloves of garlic, minced
- Salt and pepper to taste
- 1 tablespoon capers

Method:
- In a large pan, melt the butter over medium heat along with the cooking oil (it might seem weird adding both but the oil allows the pan to get to a higher temperature whilst the butter will add caramelised flavour). Add the minced garlic and saute until fragrant, about 1-2 minutes.
- Add the chopped nettle leaves to the pan and saute for another 2-3 minutes, until wilted.
- Stir in the beans and season with salt and pepper. Cook for an additional 2 minutes, allowing the flavours to meld together.
- Remove from heat and serve hot. Garnish with a sprinkle of capers for an extra burst of flavour.
