FLOWERING CURRANT CORDIAL

words and imagery from @foraged.by.fern instagram

In my opinion, there’s no better activity than making cordial from flowers you’ve picked! Especially when it tastes as delicious as flowing currant cordial. Sweet, pink, slightly herbal, refreshing and so simple.

Ingredients & Method

All you’ll need is 1 cupful (or one big / adult handful) of flowers. You don’t need to pick the flowers off individually, you can pinch off the whole drooping cluster. When you’re home, pop it in a pan with 1 cup of water and 1 cup of white sugar. Simply simmer until a nice runny syrup consistency is formed (about 15 minutes).

When it’s cool, pour into a sterilised jar or bottle.

When you’re ready to drink it, mix it up with water and pop in a few beautiful flower ice cubes!
