Physical Characteristics:
A woody perennial shrub that can grow to 4m in height.
Leaves
The leaves, 5–10cm long, grow up the stem oppositely. They have three-lobes with serrated edges. A layer of fine hairs can be found on the underside. The leaves are green in spring, changing to orange-yellow or red in autumn. I always think they look a little like sycamore leaves.
Flowers
The flower grow in large clusters and are a creamy-white colour, although I do sometimes find them being pink.
Each cluster of small flowers is encircled by a ring of much larger flowers.
Fruit
The fruit is bright red, round and growing in bunches sometimes they look like someone has dipped them in syrup as they are very sticky.
Habitat, Range and Distribution:
Found in British hedgerows and at field borders, in wetlands and on riverbanks. Sometimes it has been planted as a decorative plant in public parks and green areas. Its bark is slightly warty and gnarled and looks quite similar to Elder, with which it shares a botanical family. The leaves are broad, with three main lobes which makes them look a bit like dinosaur feet. They turn red in the autumn. The flowers are white to off-white and umbel-like, with a centre of small blossoms that are ringed on the outside by larger flowers (this is a key differentiator between Gudler Roses and Elder). The flowers also blossom later and can be seen in June and July. The berries are very distinctive, being bright red and slightly translucent when ripe.
Conservation Considerations:
This is a commonly encountered plant in Britain and there are no concerns about its conservation status currently.
Harvest Time and Techniques:
The bark should be harvested in the early spring before the buds start to form. Cut branches away from the main body of the shrub and peel the bark off with a small knife. Do not peel the bark away directly because this leaves the rest of the plant open to infection.
The bright crimson berries are ready to be picked when they have gone slightly translucent. They can be harvested generously, but ensure that there are some left for the plant to reproduce and for certain birds like bullfinches and migrating Waxwings to eat.
Could Be Confused With, and Other Safety Notes:
The dinosaur foot leaves are a key feature and will help you to keep it separate from Elder, which has similar flower heads. However, the flower heads of Guelder Rose have larger florets around the outside of the umbel-like structure which are a slightly lighter colour than the smaller, inner blooms. Elder flowers are uniform.
When harvesting berries, ensure that the berries you are picking are from the shrub itself rather than any vines that may also have red berries, such as woody nightshade which is highly toxic.
As with Elder, the leaves of Guelder Rose contain compounds that can be toxic to the mitochondria. Large amounts of the berries eaten raw can lead to vomiting in some individuals. Freezing and cooking reduces this effect, and they are not toxic.
Edible Uses:
The berries are used as a native substitute to cranberries and can be added to jams, syrups, puddings, mousse or sorbet. The flavour is decidedly bitter and tangy, which can feel very unusual to the modern palate. Persevere with it, because bitter is excellent for digestion and at the very least these berries could make it into a wild cocktail mix.

Medicinal Uses:
The bark is prized for use in pain, particularly the pain caused by spasming muscles such as menstrual cramps. Other spasmic conditions like hiccoughs, nervous stomach ache and tension headaches can be eased by its sedative, antispasmodic actions.

The larger external flowers are sterile and the fruits are technically known as drupes.

We often find hedgerow plants on our walks here, as well as all sorts of seaweeds and coastal species such as sea beet and samphire. There’s little to no shade at this venue in the summer, so if it looks like it will be a sunny day bring your hat along! What to Expect on the Truffle Forage and Cookery Course in Sussex
This 5-6 hour course will give you the chance to learn about truffle foraging while exploring the beautiful surroundings of our secret location. You’ll be guided by an experienced truffle hunter who will show you how to find and collect truffles in their natural habitat, with the help of trained truffle dogs. Alongside truffles, you’ll have the opportunity to gather other wild ingredients that are in season.
After your foraging walk, you’ll take part in a cooking session where you’ll prepare a truffle-inspired meal using the ingredients you’ve collected. Past dishes have included wild mushroom risotto, truffle-infused pasta, and elderberry panna cotta. Throughout the day, you’ll sample a variety of wild food tasters, such as chutneys, jams, pickles, and syrups. After the event, you’ll receive an email with details about the truffles and other ingredients you found, along with tips on how to use them and recipes from the meal.

To ensure the success and exclusivity of this experience, please note the following guidelines:
- No Personal Dogs: As much as we love our furry friends, please leave your dogs at home to avoid distracting the truffle dogs.

During the foraging event, your professional forager will introduce you to a vast number of edible species; giving you tips on harvesting, correct identification and possible look-alikes as well as a huge range of cooking ideas.
You will have an opportunity to taste a range of pre-made wild food tasters from syrups, flavoured salts and alcohol infusions.
FOLLOWING THE EVENT
You’ll be sent an email detailing everything you found on the day, along with some tips on harvesting and how to use wild food in everyday life.

Riverside Park
6 Beechwood Mews, Tytherington, Macclesfield SK10 2SLRiverside Park, as its name suggests, occupies the floodplain of the River Bollin, following the river over 70 acres between Macclesfield and Prestbury. The area was used agriculturally until the 1980s, at which time it was designated a country park and extensive planting of trees and other plants was undertaken. Rufford Abbey
Rufford Abbey Country Park, Ollerton NG22 9DFRufford Abbey Country Park is a lovely place for a day out, and a lovely spot for foraging! We often wander through ‘The Wilderness’ as the woodland on the site has been known since 1725, by Rufford Lake, and through some open grassland. You can also, of course, take a look at the ruin of the old abbey, or check out the cafes and craft workshops located nearby. We will then head out on our walk to discover what exciting wild foods are growing nearby from flowers to fruits, fungi, seaweeds & tubers – there’s plenty to find. We run our courses throughout the year so you can experience the changing habitats and plants through the different seasons.
During the foraging event, your professional forager will introduce you to a vast number of edible species; giving you tips on harvesting, correct identification and possible look-alikes as well as a huge range of cooking ideas.
You will have an opportunity to taste a range of pre-made wild food tasters from syrups, flavoured salts and alcohol infusions.
FOLLOWING THE EVENT
You’ll be sent an email detailing everything you found on the day, along with some tips on harvesting and how to use wild food in everyday life.

It is unsurprising, then, that this is an ecosystem formed on a basis of sandy, acidic soils, with sandy beaches and a sandstone cliff. WHAT TO EXPECT
To begin, we will go through the basics of foraging, how Totally Wild got started and some of the best practices we’ve found along the way.
We will then head out on our walk to discover what exciting wild foods are growing nearby from flowers to fruits, fungi, seaweeds & tubers – there’s plenty to find. We run our courses throughout the year so you can experience the changing habitats and plants through the different seasons.
During the foraging event, your professional forager will introduce you to a vast number of edible species; giving you tips on harvesting, correct identification and possible look-alikes as well as a huge range of cooking ideas.
You will have an opportunity to taste a range of pre-made wild food tasters from syrups, flavoured salts and alcohol infusions.
FOLLOWING THE EVENT
You’ll be sent an email detailing everything you found on the day, along with some tips on harvesting and how to use wild food in everyday life.
WHAT TO BRING
Ultimately bring along anything you feel necessary for a day outdoors. We will be outside for the majority of the course during rain or shine. We do advise the following items:
Suitable clothing for the predicted weather (an umbrella if it’s predicted rain)
Sturdy footwear. Walking boots are highly recommended.
A drink – some wild flavours may be strong and water is always advised for a days foraging
Snacks should you feel the need for them during the foraging walk.
A pad or paper should you wish to take notes

The area was used agriculturally until the 1980s, at which time it was designated a country park and extensive planting of trees and other plants was undertaken. The park is now home to a small woodland as well as lots of open grassland where we find all sorts of interesting wild edibles.
