Wild garlic and Alexander omlette

This recipe is Part soccata, part omelette –

I made this super simple and absolutely delicious dish for lunch with


  • 1 cup of chickpea flour,
  • 1 scant cup of water,
  • 2 eggs,
  • 1 grated zucchini,
  • 1 handful of wild garlic and 1 of wild sorrel – finely chopped


Mix all the ingredients together well, heat a shallow pan and fry off until golden on the base, usually 2-3 minutes. Then flip (this is where you can get carried away) fry for a further 2-3 minutes on the other side and then remove and enjoy.
