Crumbly, forest flavoured, buttery bites of deliciousness! I was so happy with these biscuits, they will definitely be served up on some of my 2020 workshops! Just the smell transports you to the woods and gives you a huge, nourishing nature hug!
Ingredients
- 50g caster sugar
- 125g butter
- 2 tbsp chopped fresh pine, fir or spruce needles (chop them small!!)
- 175g self-raising flour.
Method
- Put your oven on Gas 6 (Or 180°C)…
- Simply beat your sugar and butter until light and fluffy, then mix in the pine needles, flour and a pinch of salt if your using unsalted butter!
- Bring together with your hands to form a dough and split into 12 pieces. Press into the holes of a nonstick muffin tin – this means you have lovely thick biscuits!
- Bake for 8 mins or until lightly golden.
- Leave to cool in the tin for around 10 mins, then turn the tin over onto a cooling rack and tap out the biscuits. Leave to cool completely.
I also mixed up icing with some dried pine needle powder I had in my cupboard! You could make a plain icing, or try one with lemon or lime instead!
