Wild Garlic Roasted Potatoes

These crispy wild garlic pesto potatoes are super easy to make and full of flavour. The potatoes are first roasted, then fried with pesto so they get golden and a bit crispy, with some tasty charred bits. They go great as a side with meat or eggs, or just on their own with a bit of grated Parmesan on top.

Ingredients:

  • 200g potatoes,
  • salt,
  • pepper,
  • 1 table spoon wild garlic pesto

Method:

  1. Chop the potatoes in to about 2cm cubes,
  2. par boil them for 5 minutes,
  3. drain,
  4. Salt and pepper the potatoes and then roast in the over on 200C for 10 minutes,
  5. Remove from the oven and fry in a pan for 5 minutes with the wild garlic pesto.

Tips:

  • Letting the pesto catch slightly in the pan adds a delicious, crispy texture.

  • These potatoes pair well with grilled meats, fried eggs, or a fresh green salad.
