Wild Garlic roasted potatoes

Ingredients:

  • 200g potatoes,
  • salt,
  • pepper,
  • 1 table spoon wild garlic pesto

Method:

  1. Chop the potatoes in to about 2cm cubes,
  2. par boil them for 5 minutes,
  3. drain,
  4. Salt and pepper the potatoes and then roast in the over on 200C for 10 minutes,
  5. Remove from the oven and fry in a pan for 5 minutes with the wild garlic pesto.

Tips or extra notes:

The pesto goes nice and crispy where it burns a little, I sometimes top with parmesan cheese also
