Fig Leaf Cookie

Fig Leaf Cookies

This is a nice, simple and delicious way to use the leaves from a fig tree to get a sweet treat whilst waiting for the figs to ripen! The fig leaves will need to be dehydrated or dried and then ground into a powder.

Ingredients

  • 225g plain flour 

  • 150g softened salted butter 

  • 80g light brown sugar 

  • 80g Granulated sugar 

  • 1 large egg

  • 1/2 tsp bicarb soda

  • 200g white choc chips

  • 1 tablespoon of fig leaf powder

Method

  • In a Large bowl mix all of the ingredients together

  • make up small dough balls in your hand – about the size of a golf ball and place on non-stick paper – about 5cm apart from each other

  • Bake in the oven on fan 6 for 10 minutes

    Enjoy with a nice cup of tea in the sun!
