This is a really nice way to get some use out of the very common Acorn
1 cup of leached acorn flour
2 cups all-purpose flour
2 cups sugar
2 teaspoons baking soda
2 teaspoons ground allspice
1-1/2 teaspoons baking powder
1 teaspoon salt
3 large eggs
1 cup coconut oil
1 cup mashed ripe bananas (about 2 medium)
Making the acorn flour.
Peel the outer shell from the acorns and blitz and finely as possible.
pop in a pan with enough water to cover, and bring to the boil and simmer for about 5 mins until the water becomes a thick paste.
Add a little cold water to help wash off the liquid and strain through a sieve until all of the liquid has gone. Discard the liquid and if you feel the acorn flour is a little bitter still repeat the process.
Add all ingredients to a food processor and blend until smooth!
Put in an oven proof container and cook for 1hr on 180 or until a skewer comes out clean.
