Acorn Banana Bread

Acorn Flour Banana Bread

This is a really nice way to get some use out of the very common Acorn and use up some of those bananas that you had forgotten all about. With this Banana bread made with acorn flour! 

Ingredients

  • 1 cup of leached acorn flour 

  • 2 cups all-purpose flour

  • 2 cups sugar

  • 2 teaspoons baking soda

  • 2 teaspoons ground allspice

  • 1-1/2 teaspoons baking powder

  • 1 teaspoon salt

  • 3 large eggs

  • 1 cup coconut oil

  • 1 cup mashed ripe bananas (about 2 medium)

Method

Making the acorn flour:

Peel the outer shell from the acorns and blitz and finely as possible.
Pop in a pan with enough water to cover, and bring to the boil and simmer for about 5 mins until the water becomes a thick paste. 

Add a little cold water to help wash off the liquid and strain through a sieve until all of the liquid has gone.  Discard the liquid and if you feel the acorn flour is a little bitter still repeat the process.

Making The Banana Bread

Add all ingredients to a food processor and blend until smooth! 
Put the mix in an oven proof container and cook at 180 degrees for 1 hour or until a skewer comes out clean.
