Nettle, Sea Kale and Sea Spinach/beet, chorizo & rice

This is a fantastic, fresh and filling recipe that can be cooked up in just 5 minutes. Often we think recipes involving wild food will take hours and hours or even days to cook up but the truth is wild food can link into our modern diets and cooking methods really easily.

Ingredients

  • 250g rice and pulses mix (microwave pouch)

  • 60g chorizo, diced

  • 30g nettle tops, finely chopped

  • 50g Sea beet, diced

  • 50g Sea Kale, diced

Method

  • Pop your rice and pulse mix in the microwave following the instructions on the pack (use whatever brand you like)

  • In a hot pan start by frying off the diced chorizo – this will brown them off and release some of that tasty oil into your pan

  • After 2 minutes chuck in all of your wild ingredients, nettle, sea beet and sea kale and cook for a further 2 minutes until nicely softened

  • Pour the microwaved rice and pulse mix in to the pan and cook for a further minute until nicely mixed

  • Plate up and enjoy
