Hogweed seed Cookie

Hogweed isn’t only limited to savoury dishes, this Hogweed Seed Cookie recipe calls for the hogweed seeds to take on sweet flavours and it does so perfectly, acting as a cardamom substitute.

Makes 10 cookies


Ingredients:

200g plain flour

200g unsalted butter

80g caster sugar

2tspn ground hogweed seeds crushed and sieved(in pestle and mortar or spice grinder)

1tsp cinnamon ground


Method for our Hogweed seed Cookie:

In a large bowl place the flour, sugar, hogweed seeds and cinnamon, mixing them together well

Cut the butter in to small cubes and mix in thoroughly until well mixed

Make in to a ball, wrap in cling film and leave to rest in the fridge for 1hr

Place some baking paper on a baking tray, remove the mix from the fridge and split in to as many cookies as you’d like, dependent on the size of cookie. I usually make 10 from this mix

Place your cookies on the baking paper and put in a pre-heated oven on 180C for 10-15 minutes or until golden on top

Remove from the oven and leave 10 minutes to cool.

Enjoy them straight away or within 1 week.
