This Wild Berry Crumble is an absolute delight to eat on a cold autumn evening. You can utilise any of the berries & fruits you find whilst out foraging to add a new element to the dish.
Ingredients for 1 crumble (to serve 4):
- 20g oats
- 50g flour
- 2tbsp butter
- 1/2tsp hogweed seed powder (not needed if you can’t find)
- 1/2tsp cinnamon powder
- 50g brown sugar
- 2 cooking apples – peeled, cored & chopped in to 1cm cubes
- Any fruit you have, damsons, blackberries, raspberries etc – stoned & chopped up finely
- 50g white sugar
- Juice of 1 lemon
Method for making our Wild Berry Crumble:
- In a pan place your wild fruits and cook for 5 minutes until soft add the sugar and lemon juice & cook for a minute longer until it’s all nice and warm
- In a separate pan soften the chopped apple for 2 minutes (we want it warm but not mushy)
- Whilst the apple is cooking put the oats, butter, flour & hogweed seed, cinnamon & brown sugar in a bowl and mix well – pop on a baking tray & chuck under a hot grill to toast it (about 3 minutes until browning on top.
- All of the elements are now read
– First, put some of the fruit jam you’ve made on the plate
– then top with the heated apple bits
– top with the crumble mix you’ve made
Finish off with cream or custard to your liking – I actually like to put a little salt on mine too.
