Elderberry & Nettle Seed Energy Balls

An amazing wild energy ball recipes that will keep you going throughout your foraging excursions or bring some wild energy to the office

Ingredients:

  • 1 cup of rolled oats
  • 1/2 cup of ground hazelnuts (or other nuts/seeds of choice or more oats)
  • 1 1/4 cups of dates (if not medjool dates then soak in hot water for ~10mins beforehand)
  • 1-2 tablespoons elderberry syrup (or elderflower cordial)
  • 1 teaspoon dried magnolia petals (or ground ginger)
  • 3-4 tablespoons nettle seed for rolling

Method:

1. Add the oats, hazelnuts and dried magnolia petals (or ginger) to a food processor and blend until well combined. 2. Add dates and elderberries and as these are blending drizzle in the elderberry syrup (or elderflower cordial) until mixture forms into a ball. Add water (that dates have soaked in if using) if the mixture is too dry 3. Remove from blender and roll into individual balls. 4. Spread nettle seeds out on a chopping board or other flat surface and finally roll the balls in these to give them a speckled green coating. Enjoy! Written by Forager Hannah
